Coconut and pineapple dessert
I’ve been craving a really good dessert for a while. Coconuts and pineapples are two ingredients I love in a dessert. I have them in my kitchen pretty much all the time and I decided to combining them and make something special.I also got a little creative and made beautiful small balls that I covered in some shredded coconut and served in small cupcake paper cups.Ingredients: (yields 15-20 small balls)2 cup shredded unsweetened coconut1 cup fresh pineapple cut into very small pieces, canned is fine1 cup of coconut milk1 cup of sugarZest of a limePreparation:1. In a large sauce pan, add the coconut and coconut milk. This is to allow the coconut hydrate while we prep the rest of the ingredients.2. Chop the pineapple finely, I used the food processor making sure I still have some texture. I like to still have small chunks of pineapple. See picture below.3. Add the chopped pineapple, sugar, and lime zest to the coconut mixture. Stir all the ingredients well and set heat to medium high. When it starts to boil, lower the heat.4. Stir every 4-5 minutes or so until all the liquid has evaporated and it becomes a syrup. Keep a close eye at this point, this is when the sugar starts to concentrate and caramelize. You can leave this as is, picture below, and place it in mason jars or any container. Because it still has some syrup, it is perfect to eat it by itself or top a toast or pancake with it. It is also a great party favor idea as I did with this coconut recipe, just make sure to double in the ingredients.5. When all the liquid/ syrup has evaporated and the bottom of the pan start browning, turn the heat off and stir the coconut pineapple mixture very well. We are left with a thick mixture.6. Let the mixture cool down and form small balls about 1 squared inch. Roll through some shredded coconut if you have any left for a beautiful decor.Assembly line...First one!These are not only delicious but so pretty.
