Banana, peanut butter, and oats tart
This banana, peanut butter, and oats tart is budget friendly, delicious, and healthy. I had a few very ripe bananas that I didn’t want to throw away, and there’s alway something we can do with them.
This tart flavor is peanut butter. There are people who are allergic to peanuts, so use almond butter or sunflower seeds butter if that’s the case. It will taste delicious as well. For the sweetener part, I used erythritol. I’m testing this almost zero calories sweetener and I can say it tastes just like sugar. The scientific studies performed have shown no toxic side effects of the use of erythritol but I won’t abuse it. The only side effect it can cause is digestive discomfort but I didn’t experience any. You can use coconut sugar or omit the sweetener part if you don’t have a sweet tooth.
Ingredients:
2 ripe bananas or 3 if they are small
1 cup rolled oats (leave them whole)
1/2 cup peanut butter
1 egg
1/4 cup erythritol or your favorite sweetener
1 tablespoon cinnamon powder
1 teaspoon baking soda
1/3 cup walnuts or other nut you have. This adds the crunch element
Preparation:
Preheat the oven to 350F. The best part of this tart, apart from the flavor, is that it’s so easy to make. Just combine all ingredients. Start by mashing the bananas with a fork. Add the egg, sweetener and peanut butter and mix well. Follow with the oats, the cinnamon and baking soda and combine. Add the walnuts and incorporate. Add the mixture to a greased square pan and bake for about 30 minutes. Insert the tip of a knife and if it comes clean, it’s done. Let it cool or eat warm with some healthy ice cream on top.
This mixture can be used for muffins or bread. Just the cooking time will vary but always test with the tip of a clean knife to know when ready.
This is how I had it for breakfast. I had a piece along a couple of eggs to balance out the micronutrients and add more protein to my breakfast. This is a trick to use to avoid ups and downs in glucose levels.
