Chickpea salad
This is a quick, healthy and delicious salad you can make any day. And this is all I look for my weekdays meals. I make this recipe at least once a week and pack it for lunch. This will also be great for a summer side dish at your next get together. You will love it.Garbanzo beans or chickpeas are full of nutrients, protein and fiber. They are very good for a meatless meal if you are trying to eat less meat or give your system a break.Ingredients:1 can of cooked chickpeas1/4 of a red onion1/2 a bell pepper, any color works1 small cucumber3 tablespoons of balsamic or red wine vinegar3 tablespoons of extra virgin olive oilSalt and pepper to tastePreparationRinse the chickpeas under cold water. Cut the veggies into small pieces. Add all of the ingredients to a bowl and combine them well. Refrigerate for al least 4 hours to allow for the flavors to come together.Enjoy!
