Peanut butter and pumpkin spice bars-gluten free
If you love peanut butter, you will adore this recipe. These peanut butter pumpkin spiced bars are gluten free because it has no flour. The base of this recipe is a jar of peanut butter. I wasn’t sure how these flavors would go together, but while I was mixing the ingredients I knew it was a hit. The smell made me smile.The pumpkin spice smell is very warming, and we totally relate it here in the US to fall. We start slowly or suddenly craving some of it as soon as we approach fall. And it is all around us at every store, in case you have forgotten about it, and advertised in coffee shops, stores, bakeries, and much more. Especially, the grocery, food and home stores, which are basically the stores I go to.I have been making lot of pumpkin bread but I wanted to also try something without flour and with less sugar. Here is the recipe for this bars.Ingredients1 peanut butter jar (16 oz or 454g)1 cup of pumpkin puree (I bought canned pumpkin puree)1 cup of sugar or honey, or 1 tbs of stevia or dates2 tsp pumpkin spice1 tsp baking powder2 eggsPreparation:Preheat the oven at 350 F.In a food processor or blender, mix together all the ingredients until well combined. Add the mixture to a greased squared pan, use a spoon to help even out the mixture. Bake for 45 minutes. Check if ready by using a clean tooth stick or knife. If it comes out clean, it is ready. Otherwise leave it for another 10 minutes. If you want a more like a cake texture, leave it longer.Let it cool down, and cut into pieces.By the way, swap the pumpkin puree and spice for cocoa powder and vanilla and you will have a type of brownies.As I write this, I am enjoying a bar while smelling a pumpkin spiced candle!Enjoy it.Inalvys
