Rustic pear cake

I had some pears seating in my kitchen for about a week and I was not very enthusiastic to eat them. I didn’t want to through them away and I had to do something with them. A simple rustic cake was what I was craving for. I have lately been reflecting and thinking about my roots, and I come from a place where nothing was wasted. It was really about using whatever we had and making the best of it. We have so much food available in this amazing country that it is a great blessing. But sometimes I see so much food being wasted. I think about showing more respect for the food, where it comes from, and all it represents. But now to this cake!Ingredients:3 pears (5 if you want to do the upside down theme)2 eggs¾ cup of sugar or 1 teaspoon of stevia if you are watching your sugar1 cup of all purpose flour1 tsp baking soda1 tsp of vanilla extract½ cup of butter (use vegetable oil if don’t have butter)PreparationPreheat the oven at 350F.Cut the pears into small cubes and add half the sugar to them. This is so they release some of their natural juice making our cake super moist.If you have extra pears, like I happened to have, you can cut them in thin wedges and place them in a layer at the bottom of the baking pan to create the upside down effect. (this means you will have a layer of baked fruit at the top of the cake once you invert it from the baking pan). Add some sugar before placing this layer of pear.Melt the butter or if you know ahead of time you will be making this recipe, leave it outside so if gets to room temperature. If melting, make sure the butter is not hot when mixing with the other ingredients.Beat the two eggs and mix well with melted butter and rest of sugar.In another bowl , mix the flour with the baking soda. Add the egg batter to it and combine all these ingredients. Follow with the vanilla and chopped pears and fold until all ingredients are combined.Place the cake batter on a greased pan, I am using a round one, and bake for about one hour. Check the cake with a toothpick or clean knife. If it comes out clean, cake is ready.This is me waiting!!!!Ready!!!I like to eat this warm.
