Shrimp tacos with avocado cream

It is Taco night! A good taco makes me really happy. And the toppings are just as important as the main ingredient so I will have a couple of toppings to make these shrimp tacos extra delicious.Preparation1. First, the salsa.I always prepare some type of salsa for my tacos. Very simple, cut tomatoes into small pieces, add some chopped red onions, salt and lime juice. So easy yet so good. I like to do this first to allow all the salsa flavors to come together. Add some jalapeños for some heat if you like it. Refrigerate.2. Next, take your clean shrimps and cut them in pieces or keep them whole if you prefer. Season them with salt, pepper, garlic and chili powder. Let them marinate while you prepare the rest of the ingredients.3. Now the amazing avocado cream.In a food process, add 1 avocado, 2 tablespoon of red onion, a bunch of cilantro, salt, and half a lime. Add a few tablespoons of water and blend until creamy.4. Cook the shrimps:Heat a skillet to high and add some oil. Add the shrimps and cook on high until ready. About two minutes if cut into pieces like in picture above.5. Now the fun part. Gather your toppings, warmed tortillas and cooked shrimps. Assemble the tacos and enjoy. I also had some pickled onions I prepared the day before.My only problem right now is to eat this slowly because I just feel like devouring this bite.Happy taco day!Inalvys
