Summer chia seeds pudding cups
Hello there! How is your summer going? We only have August left and the truth is that I want to get the most out of it. Today I am sharing a recipe that is among my top favorites of summer. It is so GOOD and good for you. We have heard about chia seeds a lot and for a good reason. They are considered a super food and source of omega 3, protein and fiber. If you haven't heard about them, they are small black seeds that when mixed with liquid increase in size and get transformed into a gelatinous consistency. Please read more about it online for all its benefits and amazing properties. But for now, I'll focus on the recipe.To give it a summer touch, I used two of my favorite summer fruits: mango and blueberries. It is important that the mango is well ripe so that it has an intense and sweet flavor. In the northwest where I live, I only find two varieties of mango, and the best one is this yellow mango that I show you in the photo below. It has a flavor so intense that it is to die for, delicious.Ingredients:2 cups of milk-I am using almond milk6 tablespoons of chia seeds3 tablespoon of pure maple syrup. (If you don't like too sweet, use 1-2 tbsp)1 mangoBlueberriesPreparation:
- In a big jar or container, add the milk, chia seeds and maple syrup. Shake well and place equal quantities of this mixture in cups or glasses, whatever you have. After five minutes, mix well with a spoon. I find the seeds start to sink to the bottom and this helps even out the seeds for our puddings. Cover and place on the refrigerator for at least 2 hours. This can be prepared the day before as well. I usually make it at night for next day.
2. Peel and cut the mango and blend until puree. Distribute this puree across all your chia pudding glasses. Top with fresh blueberries.Ready. You can eat the pudding cups at the moment or save for later. Fruits can be substituted for the ones you like or have at home, I recommend something in season, full of flavor. Coconut-pineapple is a great combo too.This is such a gourmet vegan snack or desert, even breakfast.
